A taco is the smallest unit of Mexican food. It sounds simple. It isn't. Most kitchens in Dubai cut the corner that matters most — the tortilla. They use store-bought flour wraps and call them tortillas. They aren't.

At Querida, the tortillas are made in-house every morning. Masa — the corn dough — is pressed in a 4-inch press, cooked on a flat-top comal, and stacked under a cloth to keep warm. By the time a taco reaches your table, the tortilla is still soft, faintly sweet, and actually tastes like corn. That is what makes a Mexican taco Mexican.

The fillings follow the same logic. Asada is mesquite-grilled the Coahuila way. Pastor is pineapple-marinated the Mexico City way. Tinga is chipotle-braised the Pueblan way. Each regional style is a discrete tradition, and each gets cooked the way it should be.
