Mama Lalis.

The original kitchen. The voice in the magazine. The name behind the AI concierge. Querida exists because of the way she folded tortillas and seasoned consomé in Monclova on Sundays. Mother of Obed, brand soul of the restaurant.

Back of House

The kitchen brigade.

Seven hands. One line. Open flame on the asada, comal on the tortillas, fryer on the churros. Mauricio runs the line; Luis covers; the partie crew holds the lunch rush; Stephan and Jean close.
