Inspiration · Editor-in-Chief
The reason for everything.
Mama Lalis.
The original kitchen. The voice in the magazine. The name behind the AI concierge. Querida exists because of the way she folded tortillas and seasoned consomé in Monclova on Sundays. Mother of Obed, brand soul of the restaurant.
Back of House
The kitchen brigade.
Seven hands. One line. Open flame on the asada, comal on the tortillas, fryer on the churros. Mauricio runs the line; Luis covers; the partie crew holds the lunch rush; Stephan and Jean close.
-
Head Chef · In Charge
Mauricio
Chile
In Charge of the kitchen. South-American heritage runs the asada, tinga, and chorizo sections. Calls the line on every service and trains every new station.
-
2nd In Charge · Sous Chef
Luis
Mauricio's right hand. Holds the line on the days the head chef is off; pace-keeper through the lunch rush.
-
Chef de Partie · C1
Chandar
India
Lead chef de partie. First on most weekday lines.
-
Chef de Partie · C2
Janeth
Second chef de partie. The middle of the brigade.
-
Closing Chef · C3
Stephan
Cameroon
Closes the kitchen. Last set of hands on the line every night.
-
Closing Support
Jean
Cameroon
Supports the close. Backup pace on heavy nights.
-
Steward
Aaron
Keeps the kitchen moving — every plate, every tray, every service. The unsung backbone of the brigade.
Front of House
The faces of the room.
The hosts who greet you, the servers who carry your plates, the cumbia that moves the air. Names landing here as the FOH rota lands in our hands.
-
Front of House
Ibrahim
Uganda
On the door, on the floor. The first hello and the last goodbye on most services.
-
Front of House
Lucia
Carries the room. Makes returning guests feel like family within a sentence.
-
Front of House
Irma
Reads the table the way Mama reads the kitchen — sets the rhythm of the meal.
Art · Brand · Marketing
The eye behind the look.
The murals on the walls, the typography on the spreads, the social cards in your feed. Querida looks the way it does because of these two.
-
Marketing & Brand Design Executive
Bryan
Runs the brand layer — every social card, every print spread, every campaign visual. The eye behind the typography on the walls and the typography on the menu.
