The dish
Tinga is the dish that taught most of Mexico how to slow-cook chicken — the chipotle-and-tomato sauce reduces over hours into something you could eat with a spoon. We pull the meat just before service, pile it onto warm tortillas, top with chopped white onion and a fistful of cilantro.
Three tacos to a plate. Lime wedge. Pickled jalapeño on request.
Why we make it this way
Tinga drifts into “smoky chipotle barbecue” if you cook it too long; we stop the reduction at the moment the chicken still has integrity to its own pulled texture. The chipotle is real chipotle morita (from Veracruz), not a powder.
House rule
The pickled jalapeño is the upgrade. Two of three tacos with onion only, the third with the jalapeño — that’s the way.
