The dish
Three tacos al pastor — the Mexican adaptation of the Lebanese shawarma brought to Puebla in the 1920s. Our marinade is achiote, guajillo, ancho, fresh pineapple, garlic, and orange. The meat layers onto a vertical spit, chars on the outside, gets shaved into the tortilla, topped with charred pineapple, fresh onion, and cilantro.
Why we make it this way
A vertical spit (trompo) for pastor is non-negotiable — the layered marinade needs the spit’s geometry to char properly. We were the first Mexican restaurant in Al Barsha to install one. The pineapple sits on top of the trompo so its juice runs down through the meat as it cooks.
On Querida’s Tuesday
Pastor is one of the five filling options on Unlimited Taco Tuesday (AED 79 + VAT, 12 PM – 7 PM). Most guests come back for thirds.
