The dish
Asada de Monclova is the dish closest to Obed’s kitchen growing up. The striploin sits in a jalapeño-and-citrus oil for at least four hours, then hits the open flame for a tight 90 seconds per side. Charred edges, tender centre.
It comes as tacos — three on the plate — with handmade tortillas, a small ramekin of fresh salsa verde, lime, and pickled onions.
Why we make it this way
The cut of beef is non-negotiable; we worked through three suppliers before settling on the one whose striploin holds up to high heat without going chewy. The jalapeño oil is made in-house weekly — Mama insists on the fresh chiles, never powders. The flame is real (wood-fired open grill behind the kitchen window), not gas — you can usually see it from the counter seat.
