The drink

Aguas frescas are the soft drink of Mexico — fruit (or rice, in horchata’s case) blended with water and a small amount of sugar, never the soda-syrup sweetness Western fruit drinks default to. Five rotating flavours daily:

  • Jamaica (hibiscus) — sharp, tart, deep red
  • Tamarindo — pulpy, sweet-sour, brown
  • Horchata — rice and cinnamon, milky, vanilla-ish
  • Sandía (watermelon) — when watermelon is in season
  • Piña-Menta (pineapple-mint) — bright

Why we make it this way

Aguas frescas in Dubai are usually the bottled-syrup version. Ours are made fresh every morning by Mama’s recipe — fruit pulped and strained, not syruped. The horchata in particular needs to be made fresh; the rice soaks overnight.
