The dish
The Tacazo is what happens when the Plato de Birria meets a quesadilla and asks “why pick one?” A handmade tortilla, cheese melted to the edge, shredded birria piled in, the consomé alongside for the dunk.
It’s the most photographed dish on our menu — the cheese pull works in any light. It’s also the dish guests cite when they describe Querida to their friends. “They have this thing called the Tacazo…” — that’s the line we hear back the most.
Why we make it this way
The tortilla is hand-pressed for the Tacazo specifically — slightly thicker than our taco tortillas to hold the structure under the cheese-and-birria weight. The cheese is melted, not just sprinkled — Mama insists on it sealing the inside before the meat goes in. The consomé is the same broth from the Plato de Birria, served in its own bowl.
