The dish
Plato de Birria is the dish that puts Querida on the map. The lamb is braised overnight in a stock built from morita, ancho, and guajillo chiles — a slow, patient process that produces the rich, slightly smoky broth Mama Lalis grew up with in Monclova.
It arrives in two parts. The plate of pulled lamb, fork-tender, sitting in its own consomé. And the side of broth, separately bowled, for dipping your tortilla. You can eat it as is, or tear a tortilla, dunk, and eat with your hands — that’s how it’s done at home.
Why we make it this way
The chiles are toasted on the comal until just-fragrant — under-toast and the consomé is flat; over-toast and it turns bitter. The lamb is the cut Mama specifies; not the most common cut in Dubai, which is why the dish took two months of supplier conversations to land at quality. Six hours of simmering, no shortcuts.
How to order it
Walk in any day. Plato de Birria sits on the menu permanently — never seasonal. On Talabat / Deliveroo it ships with the consomé sealed separately so the dipping-bowl ritual survives the ride.
