Lamb leg simmered for nine hours in a broth of charred onion, garlic, and ancho chile. Served with rice on the side and lime. The soup version of the Plato de Birria, lighter on the chiles.

The dish
A lighter cousin of the Plato de Birria — same long-cook lamb, fewer chiles, clearer broth. It comes as a deep bowl with a small rice tower in the centre, lime wedge, and a side of corn tortillas.
Why we make it this way
Caldo is the Mexican home-cooking baseline; what every grandmother makes when someone’s not feeling well or it’s been raining. Mama insisted on having a caldo on Querida’s permanent menu because it’s the dish she’d want her grandchildren to eat first. The lamb leg is bone-in to the kitchen, removed just before service.

The day’s Caldo is also the dish staff eats for shift family meal. If we ever stop making it, you’ll know the soul has left the kitchen.
