The dish

Five churros, fresh-fried to order — never held under heat lamps, never pre-batched. Sugar-and-cinnamon dusting goes on while they’re still hot, which is why it sticks. The chocolate is Mexican-style — thick enough that the spoon stands up — made from real Mexican chocolate disks (Ibarra and Abuelita melted together, plus a splash of evaporated milk, plus a pinch of cayenne).

Why we make it this way

Most churros in Dubai are pre-fried and reheated. Ours aren’t — that’s why they take six minutes from the order, never less. The thick chocolate dipping sauce is the give-away: thin chocolate sauce on a churro is the sign of a kitchen taking shortcuts. Ours coats the spoon and clings to the churro on the lift.

House rule

The first churro is for tasting (just the sugar). The second through fifth are for dunking.
