The dish

Chilaquiles is what happens when last night’s tortillas meet this morning’s salsa. Crisp tortilla chips simmered briefly (60 seconds, never longer) in either red or green salsa — long enough to soften the chips at their edges but keep some structure. Pulled chicken on top, crumbled queso fresco, crema, fresh onion, half a fried egg if you ask.

The dish you order on Sunday brunch and never on a Wednesday lunch.

Why we make it this way

Chilaquiles have a 90-second window before they go from “softened perfectly” to “soggy texture-soup.” We plate them at 60 seconds and rush them out. Eat fast.

On Querida’s Sunday

Sunday breakfast (7 AM – 11 AM) features chilaquiles as the lead dish in our AED 129/head Mexican breakfast. Two eggs, chilaquiles, refried beans, fresh agua fresca, coffee. Served only on Sundays — the one day the kitchen runs morning service before brunch starts at 11:30 AM.
