Three rolled corn tortillas filled with chicken or cheese, smothered in your choice of red salsa, green salsa, or our deep mole. Rice and beans on the side.

The dish
Three corn tortillas dipped briefly in hot oil to seal them, rolled around either pulled chicken (default) or queso fresco (vegetarian on request), then plated and ladled with one of three sauces:
- Roja — guajillo and ancho, deep red, mid heat
- Verde — tomatillo and serrano, bright green, sharp
- Mole — our 24-ingredient mole poblano, slow-cooked, rich, cocoa-laced
Crumbled queso fresco on top, drizzle of crema, sliced raw onion, side of rice and refried beans.
Why we make it this way
Most Dubai enchiladas use a flour tortilla and pre-made sauce — both are shortcuts that show. Ours are corn (sealed in fresh oil so they don’t go mushy) and the sauces are made in-house weekly. The mole takes Mama 14 hours to build; we don’t make it every day.
House rule
If you can’t decide between sauces, ask for the “tres salsas” plate — one tortilla in each sauce on the same plate.
