The dish
A composed nacho plate — not a tray of “everything dumped on chips.” Tortilla chips fried fresh that hour. A central dollop of pulled birria (or refried beans for vegetarian). Melted Oaxacan cheese over the top. Pickled jalapeños, fresh tomato salsa, sour cream, and a small mound of fresh guacamole on the side.
Plated for sharing — generous for two, possible for four.
Why we make it this way
Nachos go wrong fast in Dubai — the chips arrive soggy, the cheese has plastic-melted, the guac is grey. Ours arrive hot, the chips snap, the cheese pulls. The trick is small batches per order, fresh frying, and plating just before service so the chips stay crispy.
House rule
Eat it within 8 minutes. Nachos are a time-sensitive dish; they don’t forgive slow conversation.
