The dish
A full fillet of the day’s white fish (sea bream, hammour, or similar depending on the morning’s market) — battered in our Mexican-style corn-flour-and-rice-flour blend, fried hot and fast, served whole with a tower of rice, half a lime, and our green-tomatillo salsa on the side.
Why we make it this way
The fish gets battered to order and fried within 90 seconds — the way fish is meant to be eaten. We don’t pre-batch this; the line cooks call the dish on the ticket and start fresh. Mexican-style batters are lighter than American or British — we don’t want the batter competing with the fish.
House rule
The lime is not optional. The salsa verde is not optional either.
