Why one foot is the right size.

Most quesadillas are too small. A six-inch tortilla holds an awkward amount of cheese — too much and it splits, too little and it's just a folded tortilla. Mama Lalis worked the recipe for months before settling on the 12-inch as the engineering sweet spot: enough room for a generous handful of filling and a real cheese pull, but still folds cleanly without falling apart.

The tortilla is a custom flour-corn hybrid — wheat for stretch, corn for flavour. The cheese is half oaxaca (Mexican mozzarella, more elastic), half mozzarella (more melt). Together they pull elegantly. The filling does the rest.
