The dish

Three flautas, plated diagonally, garnished with shredded romaine, crema, crumbled queso, salsa verde drizzle, and a half-lime. The mushroom mix is roasted oyster + portobello, sweated with rajas, and bound with queso fresco before rolling.

Why we make it this way

Flautas only work if the tortilla is fresh and the roll is tight. Pre-rolled flautas (very common in delivery-first kitchens) leak filling and go soggy. Ours are rolled in batches of 12 to order — the wait is real, and worth it.

House rule

The first flauta is for tasting straight (just queso). The second is for the salsa verde dunk. The third is for whatever you’ve decided is your favourite.
