The dish

Two perfectly-ripe Hass avocados, halved on order, scooped, mashed by fork in the molcajete. Lime juice, sea salt, the smallest dice of red onion, a fistful of cilantro, a half-tomato on top. Served with Querida’s fresh-fried corn chips on the side.

Why we make it this way

Most guacamole in Dubai is pre-made and held cold. Ours isn’t — that’s why ordering it adds 4 minutes to your bill, and why it always tastes brighter than what you’ve had elsewhere in town. Pre-mashed avocado oxidises and goes flat in flavour within 20 minutes; we never let that happen.

House rule

Eat it within ten minutes — the lime won’t keep it green forever. We make it to be eaten, not photographed.
