The dish
A flour tortilla wrapped around our calabacita-and-rajas filling — Mexican zucchini sautéed with charred poblano peppers, sweet corn, black bean, and crumbled queso fresco. Served with our two house salsas and a small mound of pickled onions.
Why we make it this way
Most “vegetarian Mexican” in Dubai is the meat version with the meat removed. Ours is the dish Mexico actually cooks for vegetarians — calabacita is a national vegetable in central Mexico, treated with the same care a beef cut gets in Northern Mexico. The poblano is charred, peeled, and sliced fresh; never canned.
