The dish
Esquites — the off-the-cob version of elote. Sweet corn kernels charred on the comal until just-toasted, dressed with mayo (light), lime, ancho chile powder, crumbled cotija, finely chopped cilantro, and an optional drizzle of Mexican crema (ask).
Served warm in a deep cup, eaten with a spoon. The simplest dish on the menu — and the one that surprises first-time guests the most.
Why we make it this way
The corn is charred fresh in small batches; you can’t pre-char it without losing the popping-sweet edge. The cotija is real cotija (Mexican-style, not feta) — sourced through the only importer in the UAE that brings the real version.
