The dish
Despite the name, the Torta Cubana is a Mexican sandwich, not Cuban — named for the Cuban-style telera bread (a soft, slightly elastic roll) that holds it together. Layered: refried beans schmeared on the bottom half, breaded chicken milanesa, slice of cooked ham, slice of queso, avocado, tomato, sliced pickled jalapeño, lettuce, mayo, top half of the telera.
Halved, served with chips and a small dish of pickled onion.
Why we make it this way
The Torta is the dish of Mexican lunch counters — the sandwich a worker buys from a corner fonda and eats standing on the street. Ours scales that up properly: the telera baked fresh by our supplier, the milanesa breaded to order, the assembly fast (the bread shouldn’t sit and absorb the bean moisture).
